We are thankful for the many flavors of beer and the journeys our palates can travel! With creativity in perpetuity, possibilities are infinite. We’ve got a wide variety of styles for your holiday and beyond. From a fresh batch of Sonic Architecture (Wave 9 is our Thanksgiving surprise for ya) to a fruited sour to a bottle-conditioned mixed fermentation ale to a bold stout to a clean Pilsner, we’ve got a little something for every taste. Sure, Thanksgiving looks a little diff...erent this year but we’ve still got a lot to be thankful for. We’re thankful for our awesome brew crew and beertenders and all of you for supporting us in this challenging year. We are taking the day off on Thanksgiving full of gratitude and hope for a promising tomorrow. We wish all of you a restful, delicious and healthy Thanksgiving! Although we are closed tomorrow, we’re back to normal hours on Friday. Note that we have temporarily suspended indoor service but it’s going to be a beautiful weekend in NYC and we’re looking forward to some sidewalk beers in the sunshine. Thanks, friends. See more

Introducing Fleur de Marteau, a 4.2% Brett Ale with chamomile, elderflower & rose hips. Fleur de Marteau (Flower of the Hammer) is a mixed fermentation ale that was fermented with a Belgian farmhouse yeast then aged with Brettanomyces for seven months. The beer was infused with chamomile, elderflower and rose hips, adding more layers of complexity and nuance. The result is bright and elegant, delicate yet vivacious. Delicious for any occasion and pairs well with salads, creamy cheeses, fruit desserts and seafood. Each 500 mL bottle was bottle conditioned, corked & caged and labeled by hand. We’ve got a Very Special Beer release today. Meet Midnight Sauce, a 9% Belgian Dark Strong Ale and our very first can conditioned beer. This big Belgian ale is complex, rich and warming with notes of dark caramel, fig, raisin and a touch of peppery spice. While Midnight Sauce is delightful on its own, it pairs extremely well with food and will be poured at our holiday tables this year. The rich malty notes harmonize with savory vegetables and meats while the high carbonation ...cleanses your palate between bites of even the richest of cheese dishes. This beer pairs as well with turkey as it does with pecan pie with a dollop of whipped cream. However you are celebrating this week, we wish you a restful, delicious and safe holiday. And about that can conditioning. We normally force carbonate our cans, meaning we chill the beer in the tank and inject CO2 into it until we reach the carbonation level that we desire. And while that is a perfect method for most beers, we wanted to honor this beer with a more traditional carbonation technique. After Midnight Sauce fermented, we added sugar and yeast in the tank, canned it and stashed it in the back of our taproom. Over 5 weeks, the yeast produced carbon dioxide, naturally carbonating the beer, resulting in a higher level of carbonation with a slightly different mouthfeel. Can conditioning also gives this beer an extended shelf life and enhances the aroma and flavor. We’ve been dreaming of this beer for awhile and are truly excited for you all to taste it. New Sour: Prickly Whiskers, a 5.2% sour ale featuring Prickly Pear. We dosed our newest sour ale with fruit from the Opuntia, a cactus native to the Americas. Prickly pear fruit is bright red and has notes reminiscent of watermelon, raspberry and bubble gum. Prickly Whiskers is balanced, not too sweet and not too sour and pours a gorgeous red in the glass.
