No-Bake Oatmeal Powerballs 1 cup dry oats 2/3 cup toasted, unsweentened coconut flakes... 1/2 cup unsweetened nut butter 1/2 cup ground flax seed 1/2 cup semisweet chocolate chips 1/3 cup honey 1 tablespoon chia seeds (optional, see note below) 1 teaspoon vanilla extract Mix all of the ingredients together in a medium bowl. Cover and refrigerate in the bowl for 30 minutes. Remove mixture from fridge and roll into balls approximately 1-inch wide. Enjoy right away, or store in the refrigerator in an airtight container for up to one week.

Sloppy Vegan Grain Free Plant-Based Nacho Plate for One" (The recipe does make a little more than one serving if you want to share.) CHIPS: Preheat oven to 375. Peel and slice a large sweet potato (or two small) into thin rounds. Coat in avocado oil and bake on parchment for 10 mins, flip, and 10 more mins, until starting to brown but not falling apart. CHEESE: Combine 1/2 cup raw cashews, 1/2 cup boiling water, 1 tbsp nutritional yeast, 1/2 tsp cumin, 1/2 tsp chili powde...r, 1/4 tsp salt, and a tbsp of your favorite hot sauce (not if you don’t like spicy!) and blend for 1 minute until very smooth. (If you don’t have nutritional yeast and you’re off dairy - now is the time to try. So many cheesy possibilities and it’s a B vitamin/ protein boost! I use @bragg brand.) TOPPINGS: This photo has beans, which is tasty, but if you’re doing @whole30 and need a legume free option, you can do sautéed cauliflower with taco seasoning like I did last night. (Of course if you’re not vegan, any taco meat would work.) Layer everything up, pour some cheese sauce on top, and finish with mashed avocado, cilantro, hot sauce, salsa, jalapeños, etc.! ~ Emily Newlands Murphy Jazzercise Training & Development Specialist

Easy chocolate covered banana bites Cut up three bananas into coins and lay them on a parchment lined baking sheet. Mix 1/2 cup pb and 1/4 cup coconut flour (protein powder would be good here too!). Smear pb mixture to one side of banana coin and top with another banana coin. Freeze 1 hour. Melt 1/2 cup chocolate chips with 1 tsp coconut oil. Dip half of the coin in the cocolate mixture (sprinkle with salt optional) and freeze at least 30 min! store in freezer or fridge. #cleaneatguide #erinliveswhole #yum #jazzercisebrockport

Here’s a yummy WHITE BEAN SOUP recipe that will warm you up. Ingredients: 1 Tbs EVOO 3 Celery sticks ... 3 Carrots 3 Garlic cloves 4 Cans Cannellini beans, drained 32 oz Vegetable broth Pinch salt & pepper Thyme (garnish optional) Directions: Add the EVOO, chopped celery, carrots, and garlic to pot. Sauté until the veggies start to soften. Add the beans and vegetable broth. Bring to a boil, stirring frequently. Add salt and pepper to taste. That’s it. Easy. Delish!
