Just some photos that bring me back to my childhood memories. My mom clammed in the early eighties and we still buy clams from the local dealer on Long Island my mom sold to. The sardines remind me of my dad he so loved canned sardines, fresh wasn’t available back then. The crabmeat reminds of my days of working for @chefjohntesar in the Hamptons. John gave lots of chance when we kids were trying to make in the food world. Nothing like crab cakes and basil scallion aoli , Hampton square staple .
I am sure everyone ate their fair share of meat last weekend so we are here to help you feel healthier!!!! They say beauty is in the eye of the beholder well it might be true with these selections. Doing a quick tour of what’s in the warehouse and what’s in season. Fish you should be buying local North Carolina swordfish (from the USA Commerical fishing fleet ) Onaga , snowy grouper ( both are a true treasure) barrel fish ( they live around 500 feet down in the ocean ) Nova Scotia dayboat halibut ( the pictures shows it beauty ) wild striped bass from Long Island ( not pictured ). Coming in tonight wild Alaskan king salmon from Sitka sound, we will have red and whites. We will have Santa Barbara uni for Friday so preorder if want it. Wild striped bass from NY, razor clams ( Massachusetts) King kampachi ( beyond sushi grade ) Florida Onaga snapper ( these are truly amazing fish ) not pictured barrel grouper ( so flavorful) and finally hamachi for all the sushi fans . Some staff chooses for the weekend . Frozen local bluefin toro , frozen fatty swordfish belly . Fresh blue crab meat jumbo lump and blue crab cocktail claws. What more to say softies !!!! Nothing like a soft shell crab sandwich. Some local porgies and bonito ( yes repeat from yesterday) and crazy killer tuna and sword coming in these time of the year . Our swordfish has made a huge comeback !!! With the huge efforts of USA fisherman and even @bwfa_usa and local USA dealers. So don’t go cheap and buy imports support the USA fisherman who made this fishery green by @seafoodwatch. Respect USA fisherman and their families not the imports they hurt us. Unfortunately awful fact 91 percent of all seafood is imported. That’s because everyone wants cheaper not better. So think about it when buying ask for USA FISH.
We can all look at a piece of fish and see something different. Here at Pierless we look at fatty tuna and hope everyone understands that fat over color is more important. Eat with taste buds not your eyes !
