Grateful to have been able to spend Thanksgiving with friends. These two salads will be added to the winter salad rotation. Massaged kale mixed in with radicchio , red onion and Pan di Zuchero from the farm, persimmons, pomegranate and caviar lime and good quality olive oil. Pan di Zuchero literally means sugarloaf and is a not so bitter chicory . The persimmons, pomegranate and caviar lime are from fruitstand.com. I have been ordering occasionally from them since March. This... online site works with local farms and food artisans dedicated to growing and preserving sustainable healthy foods. Having it shipped to me is probably not very sustainable , but I have really enjoyed their products. They are very high quality and I have discovered a few new fruits. My other thanksgiving salad had been in my rotation for years. It’s Ottolenghi’s fresh figs and sweet potato salad. My feed has been flooded with ads for Nuggs, a plant based chicken nugget. I always like to try new products? and checked out their website. They call themselves the Tesla of chicken, claiming that their advanced soy protein technology enables a hyper -realistic simulation of the texture and flavor of an animal based nugget. You can’t buy them in a store yet, but they will deliver a ( pricy) box to your door. They cook in 15 minutes in the oven and look surprisingly like a c...hicken nugget. Very crispy outside and tender inside. While I like these, I don’t think that they are worth the steep price. There are a lot of plant based chicken alternatives out there that are pretty good and cheap. They will probably end up cheaper at some point. I remember that the impossible burger would set you back $18 when they were first introduced in restaurants. These aren’t healthy btw. They don’t claim to be either. Foods that are processed are rarely healthy even if they are plant based . Another traditional stamppot is the andijvie stamppot. Potatoes mixed in with raw curly endive and crispy bacon. My meat free variation had the cooked potatoes from the Featherbedlane farm stamped with raw escarole from the farm as well. Escarole is a leafy green from the chicory family and its slightly bitter flavor is perfect for an andijvie stamppot. Instead of bacon I salted my mashed potatoes with J&D’s bacon salt. I have a spice habit and this one was purchased on Amazo...n. It’s kosher , halal, vegetarian and has a smoky salty flavor. Topped with leftover Ookworst ( see my previous post ) and served with a beet carrot salad with candied pecans. To make the candied pecans mix those with maple syrup, chile powder and liquid smoke. Bake ten minutes in a 400 degrees oven. You can use walnuts instead.
