NOT ALL MATCHA IS CREATED EQUAL. Here are 3 simple tips to help you determine your matcha's quality. Color: The deeper/richer the shade of green, the higher the quality. Even good matcha that's improperly stored, or kept too long can oxidize and end up looking like the culinary grade. Smell/Taste: When added to water, does it smell fresh? Your nose knows. Quality matcha will have rich, fresh notes, while stale/poor matcha will smell flat with dry hay or dirt notes. As l...ong as matcha is prepared properly, it should also have an even, well rounded vegetal taste - without tasting dry, sour, or bitter. Date/Origin: Where was the matcha harvested? Where? The more you know about your matcha's back story, the more likely you'll be choosing a quality tea.
