From the last week of June to the start of August in Provence, the most wonderful experience is taking time to visit the vibrant and beautiful lavender fields. There are two different kinds of lavender in provence, Lavandine and fine lavender. Fine lavender is solely grown in provence while Lavandine is a cross between fine lavender and spike lavender, one that is not commonly grown in this area. Have you ever been to Provence? Brioche à tête, or Brioche Parisienne, is known to be lighter and more airy due to its use of yeast in lieu of sourdough starter. Its name comes from its head-like shape that is formed by placing one sphere on top of another in the baking process. With its large amount of eggs and butter, this confection creates a rich and fluffy interior with a flaky, golden exterior from the egg wash. We absolutely love brioche à tête, it's a great snack to have with tea or coffee.
