All Things Cupcake

Better late than never, right? Had a wiiiittle too much fun with this order of 2 dozen red velvet cupcakes and cream cheese frosting from this past Christmas!

It has been awhile, but I swear I haven't fallen off the face of the planet! Here's some mini chocolate espresso cupcakes to prove it.

Okay I am caving! Here is the simple yet delicious caramel recipe if any of you want to make it from scratch... There's nothing like it! 1 cup brown sugar (I normally use light brown, but sometimes I'll use dark brown for a sweeter caramel) 1/2 cup half and half 4 Tbs butter... 1 Tbs vanilla Pinch of salt **Mix the brown sugar, half and half, butter and salt in a sauce pan with the heat on low. Let it sit for about 5 minutes (whisking every minute or so), then add in the vanilla. Let it sit for another 5-7 minutes while continuing to whisk it. Next, let it cool, put it in a jar and refrigerate. The day after making it is always the best once all the flavors have sat! Enjoy :)
