Our newest addition a sushi knife made in Italy! Amazing design. Fantastic taper, composite handle, perfect gauge and note the different size rivets to accommodate the tapered handle! I almost forgot RAZOR SHARP!!!

Today I had the privilege of sitting in on a butchery class at The Center For Discovery in Monticello NY, hosted by Chef Cesare Casella and master butcher Simone Fracassi from Arezzo Italy. It was a pleasure to see an artist at work. I also learned a lot about the making of prosciutto from the farm to the table. Believe me, it is truly a science! I also learned that the butcher needs to know how the meats will be cooked in order to prepare the proper cuts, the chef must know the cuts of meat in order to cook them properly, and the knifeman must know how each of them uses their knives in order to sharpen them properly. It was a very good educational experience for all of us. Thank you for inviting me!

We haven't posted in a while. It has been a very busy Spring, so we have had our noses to the grindstone. All good stuff! We will have some good posts for you soon! Stay sharp!
Another teaching milestone. Yesterday I taught 2 senior culinary arts classes at Long Island City High School how to stay "a cut above" the rest. We had a productive knife sharpening skills training session. I was invited by chef/instructor Laura Molite to help her students gain more "knife knowledge". Everyone enjoyed it and we got a lot of good feedback. I wish all the students much success in their culinary endeavors!
