Yo Friends: COMFORT FOOD DOESN’T HAVE TO FEEL TERRIBLE. Being healthy and feeling well is about balance. This afternoon the craving hit- I need mac and cheese. Knowing I don’t do well with certain dairy products, I decided to experiment with butternut squash as the base of my cheese sauce. Here’s what I did: Cook or roast butternut squash. I used my instant pot- cubed that baby and added 1/2 cup of water - high pressure for 6 minutes.... Once I let the pressure off (no delay here), I used an immersion blender to make it creamy. Cook bacon in oven at 400 for 15-20 minutes (you can add any other protein here - whatever tickles your fancy) Add oil or butter to a large sauté pan and sauté chopped sage leaves and minced garlic until aromatic and your garlic starts to brown a bit. Add in the creamy squash. (If you aren’t using a steamer bag this is where I’d cook the chopped raw broccoli- you want it el dente and not mush. Reduce to a low heat and add in 3/4 of your cheese. You can choose any cheese you want - just don’t use pre-shredded cheese because it’s coated and doesn’t melt as easily as a block you’ve shredded yourself. You want the cheese sauce to be smooth. Add salt and pepper to taste. Cook your noodles according to the package but reduce your cook time by 1 minute - you want them el dente Roughly chop your bacon Reduce your oven to 350 Add it all together - noodles, cheese sauce, bacon, broccoli and spoon into a Pyrex dish or cast iron (I used cast iron) Sprinkle remaining 1/4 cheese you set aside on top and cook for 20 min at 350. At end of the cook time turn to broil and crisp up the cheese on top - 1-3 minutes. It turned out FANTASTIC... sweet, salt, crispy, creamy. Our family doesn’t eat comfort food all that often but when we do it’s possible to make modifications that work for us. The bitterness of the broccoli, acridity of the garlic, and aromatic quality of the sage help to balance the sweetness of the squash and thick/dampening quality of the cheese. This recipe can easily be done done gluten free. Our family is not GF. I used an organic medium shell noodle. The combinations are endless
