Traditionally, nutrition counseling emphasizes what NOT to eat, especially as it relates to Diabetes Care. After any food intake, the blood sugar levels rise, but more so when starchy foods or "carbs" are consumed. This month, observations were published in the Journal of Diabetes Care (see: http://care.diabetesjournals.org/content/38/7/e98.full) that the order of food eaten has a significant impact on blood sugar levels after eating. The findings suggest that eating protein (meat, fish, etc) and vegetables first before the carbs helps manage the sugar levels after eating. Another reason to push the bread basket away before your meal!
