Most of you guys know them as Puerto Rican breakfast buns, made popular on this side of the Atlantic by such landmark... establishments as La Bombonera in Old San Juan, but mallorcas originally hail from (you guessed it!) the Balearic Islands off the eastern coast of Spain. Before they became vehicles for grilled ham and cheese (or loads of butter and confectioners’ sugar if that's how you slice it), the sweet pastries likely started out as breads baked for the Sabbath, similar to challah. Many Sephardic-Jewish conversos even went so far as to incorporate lard into the recipe to prove their loyalty to the church during the 14th and 15th centuries.
