Good morning friends and family. We hope everyone is well. It is Lunar New Year’s Eve today, and it is one of the biggest holidays of the year in our culture. We will be closing at 7 sharp tonight, so please respect our time.... We will be open regular hours tomorrow 11-7 as well. Many Chinese businesses around the world actually close for the holiday sometimes for more than a week. Unfiltered. Never ever filtered, doctored, photoshopped, manipulated, etc. Chicken fingers. Gold finger. Chicken nuggets. Chicken strips. Fried chicken. Breaded chicken. We here at the shop call it sweet and sour chicken. With or without sauce the choice is yours.... For 26+ years we have used a consistent formula and approach to this. It is an art to see this come to fruition on the daily. Hand sliced strips of chicken breast in our own proprietary batter fried to a golden crisp. Hand dipped and fried. ACTUAL hand cut strips of chicken breastnone of that processed mumbo jumbo fast food chicken that is being peddled out there by those titans in their respective industries. No fluff involved here. We would like to thank everyone for the well wishes and congratulations on the family business turning 26 years of age. It has been an interesting year. If there is one thing that the last year has taught us it is perseverance. We persevered through a four month long closure. Involuntary mind you.... We persevered through fighting the power to open for business. We continue to dig ourselves out of the hole brought on by the powers that be. We refuse to let the American Dream die. We will not fold. We will not bend the knee. We don’t know how to quit. And it is because of you. You see for the last 26 years this small family business has faced adversity throughout its existence. Every harsh winter of every year. Racism on a personal level and on the business level. Industry stereotypes. Line them up and we knock them down. To all the people that thought we couldn’t. To all the people that thought we wouldn’t. Guess what? We still here. In order to achieve you must believe. Quitting is not an option. Our counter has been open to the public for 26 years. For 26 years this community has shown that a small family business can make it. The last year may have reinvigorated our belief in perseverance. But for 26 years what the business has taught us is that wanting to be successful is not enough. You have to need to be successful. You have to have a relentless pursuit of outstanding work ethic and a need to be the best representation of you. It’s not a want. It’s a need. This morning starts like any other. For 26 years this door has opened and closed millions of times. The stories, the adventures, and the hours are immeasurable. Total hours for last week: Poppa Chan: 46 Momma Chan: 62 Me: 95.5... A few weeks ago I had drinks with a young aspiring entrepreneur. He asked me what it took to run a successful business. I told him I am not a success. I told him that I can only share with him what I have learned from my parents. They are the true success story here not I. The following quote came to mind immediately when I was speaking to him. This is one of the teachings from Confucius. I have always interpreted this as If I don’t want to do it, then why would I ask someone else to? My parents taught me to lead by example. Go and do the work. Don’t ask others to do something you would not do. That’s lazy. That’s cowardice. That doesn’t earn respect. This is how you get things done. When you lead by example your teammates respond. Do this in business and you won’t fail. Charisma. That’s what that is. You see my parents said that when you own your own business you have to know the ins and outs. You need to be versatile and knowledgeable of all aspects in the operation. They taught me that you cannot always rely on others to do the work nor rely on them to be there when you need them. So who do you rely on? Easy answeryourself. You control your actions, emotions, and your destiny. I was taught that a successful business is one where the owner actually does the work. Oftentimes no one does it better than the one(s) invested. The Chan Parents could not be any more right. They provided the blueprint. I’m just lucky to be able to absorb the techniques, strategies, and wisdom they have demonstrated. That’s winning. Thanks mom. Thanks dad. Last week’s numbers: Poppa Chan44 hours. Momma Chan60 hours. Teddy105 hours.... We are still here Supreme Lord Commander. Still not bending the knee. Still working for free. Whatever it takes. Thank you to the community and all the students at SUNY Plattsburgh and Clinton Community College for continuing to support local as well as keeping our community safe by following protocols. We have been open for two complete months and the munchers have slowly trickled back in to get their eat on. We are beyond blessed, and beyond humbled by everyone’s kindness, love, and support as this small family continues to dig itself out from being closed for four months. If four months sounds like a small period then how does a third of the year sound? Doesn’t sound like a little does it? It’s quite the deficit to make up. Some have wilted under the pressure. Many have folded due to the financial burden. Others have decided to leave the industry due to the level of uncertainty and the ever changing climate. Some are being sued! The ones that are fighting through this continue to bleed all across the state. We fight with you. Us? We look at the powers that be dead in the eye and say no thanks. Try as you might.
