My garden is almost done. Planted green beans, red bell peppers, hot peppers, cucumbers, basil, oregano, rosemary and tomatoes. Left room for spinach and lettuce. The herbs and the marigolds will hopefully repel the insects but I will also incorporate essential oils and diatomaceous earth into the garden to help with insects and fungus. #striving4completewellness #attemptingtogarden #bountifulharvest #nomoreproducefromthestore #timeonmyhands #greenthumbwannabe

I am reposting this on Instagram because I was Like many of us, we often wonder what the future holds for our children. We ask them what they want to be when they grow up. They have their own aspirations at a young age and as parents we have our own aspirations for them. Observing my sons interests as a child, it seemed to me his career would be in the field of engineering. He had an interest in how things worked and an obsession with rollercoasters and bridges. He would ...often build these structures with his knex building set. Despite some difficulties in school we never doubted his true capabilities. We did what we could as parents to support and guide him throughout the years in preparation for college and adulthood. Today would have been graduation day from Manhattan College, School of Engineering. Sad we cannot celebrate like we had planned but it doesnt change the fact that today he has earned a Bachelors of Science in Civil and Environmental Engineering. Words cannot express how super proud we are of him for his hard work and determination. He is now working full time as a junior engineer and we are so happy for him. Congratulations Anthony! We can’t wait to see what the future has in store for you. The world is your oyster. We love you and promise we will give you the celebration you deserve someday soon. disabled. I don’t usually post about my children and their achievements because I always feel a little superstitious. This would have been a weekend of celebration and we want to share the honor with our family and friends. I posted about Anthony on Friday and now it’s Juliana’s special time. Last fall Juliana was invited to the Dominican college convocation where she was awarded a special tassel in honor of making the deans list 2 straight years in a row. We envisioned her smiling ...from ear to ear proudly wearing that much deserved tassel at her college graduation. Today is her graduation from Dominican College but unfortunately she will not be able to wear her tassel at her commencement. She has worked so extremely hard these last 4 years and made deans list again in her senior year earning a 4.0 gpa this last semester. What an outstanding achievement and we couldn’t be prouder. Juliana earned a Bachelors of Arts degree in Social Science with an emphasis in Psychology. Although the graduation commencement is virtual today, Juliana opted out of participating because for the next 11 months she will be part of Dominicans accelerated nursing program. Next years graduation will have more meaning to her. We are very proud of Juliana’s determination, incredible time management and study skills which makes us believe without a doubt that she will succeed in this extremely difficult program. Congratulations Juliana. We love you and we wish you the best in everything to strive for. There is nothing you cannot do because we know if you want it bad enough you will achieve it. We are two very proud parents this weekend and we hope someday to give both of our children the proper celebration they deserve.

My family does not need to ask what I want to do for Mother’s Day....ever. They know me by now. So off we go to climb the Popolopen Torne, a steep hike and rock scramble but we all made it uninjured. Now a drink in the sun and a dinner cooked by Juliana and dessert cooked by Anthony. Thank you to my family for making this a great Mother’s Day and for not killing me for taking you on this hike.

My foraging finds today. Dandelion leaves and flowers. Japanese knotweed and mugwort. I think i want to make a dandelion honey and a knotweed apple pie.

Today’s meal created by my afternoons foraging. Garlic mustard, stinging nettles and field garlic. All having incredible health benefits containing many vitamins and minerals such as A, K, C magnesium calcium iron phosphorus. It’s fun foraging for food. Beats going to the supermarket that’s for sure.

What’s better than buying fresh produce from the supermarket? Growing them yourself. My new quarantine project...... Built a raised garden bed and filled with organic soil and compost. Next step, planting vegetables. .

So awesome. Thieves spray made table 2. I carry thieves spray everywhere I go and use it pretty often on surfaces and my hands when I can’t get to a sink. So far so good .
