Simple but delicious: quinoa with sauteed onion, red pepper, baby bella mushrooms, spinach and tofu flavored with Bomba del Calabrese hot spread. Then topped with garlic/paprika roasted cauliflower!

People often ask me what I eat so this is tonight, one of my "go to" dinners for a busy life! Organic tri colored quinoa over a bed of freshly picked and hydrated arugula, 5 minute soft boiled eggs, heirloom white and red radish with a drizzle of EVOO and balsamic glaze. With the exception of the quinoa, everything came from my back yard. I haven't figured out how to grow quinoa yet! I have come to realize that it's not just about what you eat but where it came from. I grow all of my vegetables during this amazing summer season and the chickens are keeping busy too!! Looking forward to tomatoes!!!

First harvest of the season! Asparagus is loaded with vitamins and minerals and contains anti-inflammatory as well as antioxidant properties!!!

I am SOOO proud of Philip. He just lost 120 lbs over the last year through perseverance and determination. He reached a goal but he says he is on a journey. Our next goal is to do a 100 mile bike ride next month!!! It's a privilege to be a part of his journey!!!

I truly believe in growing as much of your own food as possible and sharing that experience with children. Allowing them to place tiny seeds in the soil and see where vegetables come from is priceless! In just a few weeks we will enjoy Organic Gourmet Bibb Lettuce, True Italian Arugula, Heirloom Russian Kale and Super Sugar Snap Peas!!!

Congratulations to Paul for racing in the Ironman Atlantic City 70.3! At 68 years young, Paul is an inspiration! He faithfully puts in the time and has an incredible mental attitude! He even found some time to help another competitor change a flat tire minutes before race start. That just shows you how selfless he is. He has a heart of gold!!!

Meet Romana. She came up from the Bronx to try chiropractic after experiencing severe lower back pain that limited her to a wheel chair. She showed me a page of pain medications that she was using without any benefit. After an examination, I decided to treat her conservatively. She couldn't stand without help. When she laid on the treatment table she was trembling with pain. She was fighting back tears. I completed my treatment and helped her back into the wheelchair. She cam...e back the next day in less pain, still in the wheelchair. She decided to stop all pain medications. By the third visit she walked in the office only using a cane with huge smile! Honestly, I was amazed! She was able to get on and off the treatment table. She started to go for walks with her husband's again. She was starting to live again, getting her life back! Now it's been several weeks completely pain free! So I asked her in my broken spanish, "Por que eres mejor?" She said, and I'm paraphrasing, "Tienes la sanidad de Dios por tus mamos." So I said, "MILAGRO!!" MIRACLE!! I am so thankful for the opportunity to meet Romana! She has been a blessing to me! This is why I do what I do!!
