Unfortunately, Dobutsu will be closed this evening 11/14/20 due to an employee who notified us they had been confirmed positive for COVID19. While we are confident we have been diligent in following and exceeding all mandates and safety protocols, sanitizing and cleaning thoroughly, and remaining vigilant in our personal actions to limit exposure, we believe this is for the best for our community, guests and staff. This team member had no guest contact and had been in the bu...ilding during service this weekend. They are asymptomatic and feeling well, but have begun their directed quarantine starting today. We will be closing until we can get all staff tested again, beginning today, and will remain closed until all active staff can return negative results. In the interim, we have initiated contact tracing and reporting in accordance and with the Erie County Department of Health. We will sanitize and deep clean our entire facility, and continue to practice the disciplines that have kept us safe for so long. This is truly a sign of our current climate, especially now in Western New York. We are appreciative of all the support and understanding in advance. We will always put the public health and safety of our employees and loved ones above all else. We implore our officials and leaders to continue to fight for adequate testing, free and accessible for all industries, with expedited returns of results, and efficient strategy, especially for our essential workers and our hospitality community. One of the prettier fish I have ever seen, this kintokidai snapper was a request for a very special guest. I think we’ll salt pack it a bit and then grill it real hot over binchotan charcoal, maybe with crab, pea tips and rice on the side. Such vibrant colors! Love when we see new species! Another beauty! Wild Hawaiian Big Eye, this time in small (-ish lol) lean filets, firm and ruby red. A little different texture but as pristine as weeks past! Serving this primo all weekend! A traditional jjigae featuring @barrelnbrine kimchi, tender pork shoulder, radish, scallion, and tofu in a savory dark soy broth, this one is like a personal heated blanket!
