Last week our Museum Educator, Derrick Pratt, had the pleasure of sitting down and talking with Sarinthra (Sara) Tong-Ngork, the owner of Firecracker Thai Kitch...en, for today’s #CanalConnection. The daughter of Thai immigrants, Sara grew up in Dewitt, learning to cook traditional Thai recipes, though oftentimes with a bit of a twist, as traditional ingredients were rather hard to come by at that time in Central New York. This is still reflected in Sara’s cooking at Firecracker Thai Kitchen today, as the restaurant offers its own unique spin on Thai cuisine and reflects her family’s recipes. In addition to learning to cook within the Canal Corridor, Sara also spent a portion of her childhood on the Canal’s waters, boating with her family on the canalized Seneca River. Sara began cooking professionally, starting a 20 year career that began at Lemon Grass Restaurant and has seen her work at several of the Syracuse area’s finest restaurants. This culinary journey has culminated with the opening of Firecracker Thai Kitchen in the new Salt City Market , which required a two year commitment of auditions, interviews, and classes in order to be selected to this vibrant food hall celebrating the diverse food and culture of Syracuse, a city built by the Erie Canal. We encourage everyone to try some of Sara’s delicious cuisine when you get a chance and to get ready for the Museum’s #ErieEats exhibit, which will feature Sara and several other vendors from the Salt City Market as we trace the history of food along the Erie Canal Corridor.
