Spam nachos! No fooling. Porky, crunchy and salty! Tortilla chips layered with queso blanco americano under the broiler, and then topped with fresh pico de Gallo with lime zest and juice and diced Spam, sautéed in olive oil cumin. paprika, and oregano. An amazing treat.

A Cottage Pie was called for on this rainy, windy, and chilly day. Ground beef 50/50 with short rib, carrots,sautéed pearl onions, tomato paste, Worcestershire, gravy, mashed potato and Romano cheese on top. Goes perfectly with a PBR!

One of my all-time favorite dishes Tortellini, prosciutto, peas, garlic Parmesan in cream with a splash of white vermouth with parsley.
