On today's episode of #uglydelicious... Fish Head Sinigang! . I know I know. It's not the most appetizing thing to look at, but great food ALWAYS comes from great struggles and there is nothing more simple, peasant-like, and insanely delicious than fish head soup. . Sinigang is a traditional sour soup from the Philippines. Depending on your region, folks use things like sampalok (tamarind), batwan (green fruit from Visayas), or bayabas (guava) to create a sour broth. Then d...epending on what's available, you mix in your veggies- some of the "cheaper" ones being water spinach, radishes, string beans... and then you add a protein. You can add pretty much any meat or seafood to sinigang, but you can't get a better deal than getting that fresh fish head from the morning wet market! . We don't really visit morning wet markets anymore, but there are still plenty of amazing seafood markets around. And Chef Joel always loved when his mom came home with salmon heads bc it only meant one thing- it was time for some #asimkilig! .
