#backtobasics #dinnerwithfriends One of the unexpected blessings of spending more time at home has been the opportunity to bond with my mother over food and cooking. - When it comes to steaks and bbqs, Asian, Indian, Italian or other fun ethnic dishes I'm your man. But when I'm in the mood for some mouth watering, belly pleasing, bring-you-back kind of Haitian home cooked meal I would turn to mom.... - A couple of weeks into the covid19 crisis however I decided to expand my Haitian culinary skills and set off to learn some of my mother's secret recipes and techniques. - It wasn't easy at first. Mom and I don't see eye to eye on a lot of things. I love to experiment and see what would happen if I added a hint of this or a dash of that. Mom on the other hand believes that the classics are classic for a reason - they are done the right way (which I often read as HER WAY). - This never failed to set off my inner rebel - I love systems, units of measures, data and reasons why. When asked how much seasoning to add to a dish however mom would often reply with a casual "I don't know dear, you season it until it tastes right". - What exactly does that mean? Can you tell I had a hard time with this one? - Eventually I got it though! - Mom was cooking from a different place. One that, though supported by the culinary principles and techniques that make up our time honored recipes, was also rooted in love - for the ingredients, the dish she was preparing and the people she is cooking for - as well as an instinctual know-how that only comes with experience and repetition. - The more I cooked with her the more I got it and the more I learned to let the food I am cooking talk to me and guide me to an amazing meal. - Of course I still can't resist putting my own twist on some of her classics - This is my version of Mayi Moulin Ak Zaboka (Cornmeal With Avocado) / Savory cornmeal with tangy avocado salad made with shallots, parsley, garlic, salt, pepper, red chili peppers and lime juice. . . . . #foodwithfriends #greatpeople #greatfood #food #people #impact #haitiancuisine #cornmeal #avocado #spicy #tangy #chili See more

Happy and, most importantly, healthy Labor Day to all of you. - Since the start of the epidemic we have been working on keeping safe and figuring out how to continue building community around food in the time of Corona. - We are adding finishing touches to a few projects which we hope to unveil soon. So keep an eye out for future announcements.... - Meanwhile we are putting our kitchen through it's paces, testing recipes, cooking some oldies and goodies, eating then cooking and then eating some more... Still, we can't wait to get to the sharing part! - This post is just us having fun testing out our pulled pork recipe. - We used a simple caribbean rub, added a touch of sweetness then smoked it low and slow until falling off the bones. When done, we put a generous amount on a toasted bun, added some homemade horseradish Sriracha aioli, topped it with a tangy pineapple salsa and called it a day! - And yes!
