Spring Pesto We how versatile Pesto can be. Both in the way that it is made and the ingredients that you use. Pesto has five components: herb, acid (lemon), cheese, toasted nuts and oil to blend everything together. Once you know the method, you can make endless combinations.... For us, it's one of those go-to recipes that you can customize with what you have on hand. It's a great way to use up herbs and miscellaneous greens. Choose your base: (greens and/or herbs): basil is of course classic but you can switch it up and use parsley, cilantro, mint, tarragon, even sage! It's a great way to use up beet greens, carrot tops, spinach, kale, broccoli and peas! Choose your nut (or seed): walnuts, pepitas, sunflower seeds, pignoli nuts, hazelnuts, etc all work nicely in a pesto. You can leave them raw or lightly toast them. Cheese is traditional but also optional - salty cheeses like parmesan, grana padano, pecorino romano, and gruyere work well with pesto or sub with your favorite dairy-free option or try nutritional yeast. You can omit cheese if you prefer. Build the flavor: Add in fresh garlic cloves (to taste), salt, pepper, and lemon (zest and/or juice), red pepper flakes, etc. Bring it all together: You’ll also want a good quality olive oil. Pesto can be made in a food processor, blender, or with a mortar/pestal (traditional). Let's get cooking! We love a good #onepanmeal and tonight that's "Egg Roll in a Bowl"! This is one of those quick and easy meals we love to throw together for dinner on busy nights. It's easy to customize to your families taste and a great recipe for using what you have on hand.... Tonight ours is packed with a ton of garlic for #nationalgarlicday, lots of colorful spring veggies, and some pasture-raised pork we picked up from our favorite butcher @hudson_charles. The base: - cabbage (we used Napa) - carrots - ground meat or sub (pork, chicken, turkey, or crumbled tofu) Get creative and veg up with some colorful and tasty mix-ins: - onion - garlic - ginger - bamboo shoots - water chestnuts - riced cauliflower - celery - bean sprouts - microgreens For the sauce: - sesame oil - soy sauce - rice vinegar - salt and pepper Topping ideas: - scallions or chives - chopped peanuts - sesame seeds - crushed seaweed snacks - chili oil - sriracha - sweet chili sauce How would you customize your bowl?

Serving up some delicious Fry Bread for lunch today! Fry Bread is a Native American bread that stretches back to the Navajo Nation. Fry Bread can be made sweet or savory.... Savory versions are often topped with seasoned ground beef and toppings like tomato, lettuce, beans and cheese. Sweet versions are often served with honey, maple syrup, fruit jam or preserves. We made both today in our virtual cooking camp - a sweet version with cinnamon and sugar and this savory version with seasoned black beans, red leaf lettuce, tomato, cheese and chopped peppadew peppers. Sharing our fun and healthy Monster Guac cups for a fun #cookathome Halloween inspired project! This is a great cooking activity for Little Chefs (ages 2-5) to practice soft cutting, mashing, seasoning and scooping. What you need: Clear plastic or glass cups + a black @sharpie... Skinny pretzel sticks Guacamole (ripe avocado, lime juice, salt and any optional add-ins like cumin, jalapeño, cilantro, tomatoes, etc) How to: Using a sharpie, decorate the plastic cup by making a monster-inspired face. Set aside to dry. Peel, pit and roughly chop avocado. In a bowl combine avocado, lime juice and salt, to taste. Mash. Fold in any optional mix-ins. Scoop the guacamole into the cup. Use the pretzel sticks to decorate, sticking them straight up to make monster hair! Let us know if you try this project! Tag @freshmadenyc #freshmadeathome

Rainbow Carrots Did you know that the original color of the carrot was a deep purple - not orange?!?! The orange carrot that we know and love is actually the result of a royal whim. Generations ago when Holland was the lead distributor of carrots, King William of Orange was fighting for his nation’s independence. Having never been very fond of the color purple, and in an attempt to increase national pride, the King instructed the royal carrot breeders (apparently ...that was a pretty important job back then) to breed the purple OUT and increase the orange shades. As the new orange-only carrots were shipped around the world consumers (particularly the Europeans) took quite a fancy to them and orange became the color of choice. Today, modern growers recognize the increased health benefits and heirloom varieties of carrots including purples, whites, reds, are easier to find. These Rainbow Carrots are packed full of antioxidants, vitamins, and fiber. The colored carrots have similar (many would say identical) flavor and texture to the standard orange and can be used in exactly the same way.

Children are naturally curious. Cooking is full of curiosity! When kids help in the kitchen they learn the "how" and "why" their meals are prepared. With each recipe comes an opportunity to learn: Where did the ingredients come from?... How will we use them? What will happen when we mix the ingredients together? What will they taste like? Will I like the way they taste? How can I change the recipe if I don't like one of the ingredients? How does the recipe change if I add something else instead of what the recipe calls for? Children will learn many things through cooking but the greatest lesson they can learn is to love preparing delicious, healthy, well-rounded meals.

Savoring the end of the summer harvest this week. Although eggplant is available year-round, it's peak season is July through October. We are in love with these miniature Fairytale Eggplants. They are strikingly beautiful with their royal purple hue and faint white stripes. They are undoubtedly the cutest of all eggplants. They have delicate skin and a tender, fruity flesh.... Today they were a feature on our Farmers Market Pizzas and tomorrow they will be the star of our Pasta alla Norma. Did you know eggplants are a FRUIT? And that technically they are classified as a BERRY?! Be sure to try out this variety ASAP, they are only around for a few more weeks!
