There are many ways to cook a beef brisket, but this way is perhaps the most satisfying. We set a fire before sunrise to make our own coals with hickory, then it was about 10 hours of smoking by our brisket master, mopping the meat with our sauce every 30 minutes or so. We forgot a brush, so pine needles did the job. There wasn’t a piece left over by the end of it! If you want your own brisket to smoke (or cook in an oven or crockpot), get in touch!
