What could be cooler than the great conjunction/alignment of Jupiter and Saturn. Aside from it last appearing 800 years ago, it directly applies to the Biodynamic farming practices we apply here. Steiner, the main figure and creator/discoverer of the Biodynamic principles of farming placed emphasis on the physical and metaphysical effects of planets in relation to farming. Building up the soil in the standard organic methodology was one part. But, Steiner implicated the me...taphysical forces; cosmic, astral, etc. as a way to enliven the soil from its current un-enlivened state and thus enliven ourselves. He also said more life force entered the soil underground in the Winter than in Summer. But, he also separated the activities of the soil from the air directly above it. The two are separate and hold onto different energies. The cows were out today, it was milder but windy, around 35 for the high. After the low temps last week night of -10 this is sultry. During the real cold weather, the animals enjoy the comfy barn. However, ventilation is vital. Without constant airflow the calves can develop pneumonia. The amount of water vapor the cows and calves exhale into the air is high. It creates a smog if left to linger inside the barn. But, the air must be exchanged in such a way as to not cause drafts on the calves as a cold draft is not good either. The older cows are less suseptible to such issues but still require fresh air. Luna is coming along well and becoming very antsy. On her short walks she attempts to jump,run, fly in the air, whatever she can do to burn some energy and we have to be so careful to avoid this. She is so used to running 5 to 10 miles a day that a 23.9 hour a day curfew is a bit much for her. But, she is handling it quite well. Finally, have a wonderful Christmas, if you so celebrate. Our little girl Luna, an Aussie/Border Collie, did not show up with the rest of the crew one night after their usual midnight bark-a-thon. Sometimes she may sit out and chew on a carcass piece from a pig or veal; maybe a leg bone or just the hock. She showed up a few hours later in utter agony, ears down, mega sad face, back leg looking mangled and being held up in the air. Upon a visit to the vet that following morning it was ascertained that Luna had broken her femur. ...In all our years of dog issues, a broken leg has never been one. We had to drive her to Cornell in Ithaca for surgery after our local vet determined the severity of her case. 4" of her femur had been smashed up and a metal piece would have to take the place of bone. Cornell was wonderful in all ways and Luna is a bit over two weeks into an eight-week recovery period. Aside from the mind numbingly expensive bill, things are turning out quite well. Luna, a gentle, little princess, is raring to go out with the pack. But, that's not for some time. For now, she has a set of attendants (her household) watching over her, attending to her every need. It's great to know she will be back to her self at some point; frolicking around. Her whining is already becoming the prominent sound in the house; she is telling us she wants to get to work with everyone. Soon; soon little girl. While metaphysics is generally not discussed within farming/food circles, perhaps it should. HERE'S WHY: Food is becoming nothing more than a material needed to sustain human life. If the trend continues, food will become a synthesis of earth mined raw and processed materials as opposed to biologically active plants and animals. The life force constituted within living things isn't being transferred to us humans that take such food in. Will that make a difference to humans? Maybe life force can die and fade into oblivion like old gods. Keep the force alive :)

Gaia's Breath is getting a new, fresh look in the social media sphere. More and more it appears the digital world is a force to be reckoned with and must have a certain level of priority. So, we took heed and in response are developing this with a soon to be built new web site and more active social media content. It will take some time to fully develop so keep looking us up and follow our progress. Gaia's Breath Farm has always been of the opinion that the quality of ou...r food came first and slick advertising a far second. Our limited funds could be spent on an eye catching web site and signs, our packaging etc. Or, funds could be spent on high quality animal stock, a better watering system or a thousand other things related to quality improvement It is counterintuitive to G.B.F. to build up advertising at a cost to quality. One isn't eating the ads; one is eating the food the ad represents. Now that our top end food quality has been firmly established, some funding can be used to develop our look. See you online! This past growing season wasn't exactly stellar and our storage crops suffered as a result, as did many of our greens. That translates into less product available for sale. Certain root crops grew wonderfully despite adverse conditions, even specific greens. Every season comes with a mix of adverse and beneficial growing conditions. What makes a tomato plant happy might not be what a broccoli plant enjoys. Nature doesn't please everyone at once; she takes turns. One last bit of exciting news: we are going back to our roots, so to speak, and starting up in earnest our charcuterie in areas we originally dabbled in. Prosciutto and dried sausage of various types are going into cure and in some time will be making their way to the light of day after many days of slumbering and aging in the dark. Chrissy, who as many of you know is a Johnson and Whales graduate chef, will be at it this time making charcuterie with a vengeance. These are her original recipes that were worked on and developed since the inception of the farm. Her knowledge, abilities and heart go into every piece she makes. Expect charcuterie magic when you take your first bite.

With root crops such as carrots, beets, turnips... it is perhaps best to remove the green tops upon reaching home. The reason being, the leaves help draw water out of the root drying it out. Cut the greens off and store them separately for another meal.

This season, not unlike most seasons, our vegetables have been coming due late. Our micro climate dictates to a large degree when vegetables will be ready for harvesting. Being on top of a foothill keeps the winds going and the temperatures cooler than the lower surrounding areas. However, the cooler weather also allows for high quality greens. But, even though they are late to the gate we do hope they have an audience, and a plate to fill.
