Josh is a Principal at Kohn Pedersen Fox Associates (KPF) in New York City. The term Farm to Table is a touchstone for this discussion. While it promotes the importance of locally sourced food, Farm to Table also suggests the connection between food and place-making, where the table is the place. Seen through this filter, the table is a neutral space like an architectural shell. When this space is occupied by food as well as other items related to eating, it takes on a new and compelling status as a place that can support health and well-being.
