On this day, we honor the delicious dish of shrimp cooked with butter, garlic, lemon juice, and white wine. Scampi is a culinary term for small lobster known as Nephrops (also known as langoustine or Dublin Bay Prawns) and which is completely unrelated to this day. The day is wholly dedicated to the buttery, garlicky, lemon...y, and wine-sauced preparation of shrimp. Prepare the dish using fresh or frozen shrimp. When serving the dish, add a side of noodle or rice, steamed vegetables, and crusty bread or rolls. Shrimp scampi pairs well with white wine. NATIONAL CHILI DAY National Chili Day on the fourth Thursday in February honors one of America’s favorite winter disheschili. It’s also known as chili con carne (chili with meat). In Spanish, chili refers to chili pepper and carne means meat. Chili is most commonly made up of tomatoes, beans, chili peppers, meat, garlic, onions, and cumin. However, cooks offer up so many variations to the basic chili recipe. And, with so many varieties, chili cook-off competitions love ...to feature chili as a favored entry. American frontier settlers used a chili recipe of dried beef, suet, dried chili peppers and salt. All this was pounded together and formed into bricks and dried. They could then boil the bricks in pots on the trails. At the Columbian Exposition in Chicago in 1893, the San Antonio Chili Stand helped people from all over the United States appreciate the taste of chili. Because San Antonio was a significant tourist destination, it helped Texas-style chili con carne spread throughout the South and West. In 1977, House Concurrent Resolution Number 18 of the 65th Texas Legislature designated chili con carne as the official dish of the U.S. state of Texas. Before World War II, hundreds of small, family-run chili parlors (also known as chili joints) popped up throughout the state of Texas as well as other places in the United States. Each new chili parlor usually claimed some kind of secret recipe. Ways to enjoy chili There are many ways that people enjoy the great taste of chili, some of which include: Add chili to hot dogs to create chili dogs. Top burgers with chili and enjoy a chili burgers. Combine chili and chili with fries and make chili cheese fries. Make the ultimate baked potato by stuffing it with chili. Frito pie is chili with spaghetti noodles. Transform mac and cheese into chili mac. Mix rice and chili for another flavor favorite. Add croutons to your chili for added crunch. Make it a margarita Monday NATIONAL MARGARITA DAY National Margarita Day on February 22nd rims a glass with salt and serves up a beverage that tastes like the summer sun. Known to be the most common tequila-based cocktail served in the United States, the margarita is a cocktail that consists of tequila, triple sec, and lime or lemon juice. A key ingredient is the freshly squeezed lime juice. In the United States, the most common lime is the thick-skinned Persian lime. When m...argaritas are made with lemons, they have a much softer taste. When it comes to sorting out the legends associated with the origin of the margarita, there are many. Two things are certain; the cocktail included tequila, and the bartender edged the rim of the glass with salt. In Mexico, when drinking straight tequila (especially if the quality was bad), the best course of action was to down it in one swallow, suck on a wedge of lime and lick a dash of salt off the back of your hand. It makes sense that the salt followed the lime and the tequila to the margarita glass. Today, lime is not the only flavor of margarita, and the specialists behind the bar have gotten creative mixing dried herbs, infused sugars, and exotic salts to enhance both the presentation of the glass and the flavor of the cocktail. Margaritas can be served on the rocks (shaken with ice), frozen (blended with ice), or straight up (without ice). Legends There are many different stories and myths, beginning as early as 1938, as to how and when the margarita was created. In the December 1953 issue of Esquire magazine, the margarita cocktail was the Drink of the Month. The recipe as printed was: 1 ounce tequila Dash of Triple Sec Juice of 1/2 lime or lemon Pour over crushed ice, stir. Rub the rim of a stem glass with a rind of lemon or lime, spin in saltpour, and sip. (Wikipedia) The margarita was further popularized with the 1977 release of Jimmy Buffett’s song Margaritaville. Bakeries offer these single-serving quick breads in several sizes. From mini bite-sized muffins and jumbo ones to the favored muffin tops, they also offer a varied nutritional value. Depending on the ingredients, a muffin can be high in fat and calories. However, substituting whole grains, changing a few other ingredients, an...d limiting the serving size can increase the nutritional quality of a muffin. Baking with fresh fruits and berries brings a brightness to muffins. It also keeps them from becoming dry as they bake. One of America’s favorite muffins is the blueberry muffin. Another way to add flavor and texture is by mixing in nuts and oats. Bakers often have bits of chocolate and bananas that need to be used. Raise your glass, raise your glass... NATIONAL DRINK WINE DAY While February 18th is observed annually as National Drink Wine Day, it would be a shame to celebrate only one day a year. Perhaps this day is just a reminder to drink wine. Wine does have its benefits after all. Moderate drinkers of wine have lower risks of liver disease, type II diabetes, certain kinds of cancers, heart attack, and stroke. It also can reduce the bad cholesterol (LDL) and increase the good (HDL).... Drinking wine includes other benefits as well. When paired with the right meal, it enhances the flavors of spices, fruits, and sauces. A glass of wine helps relax us. Learning about wine keeps our minds sharp, too. Since the fruits, regions, and the making of wine have such a complex story, those who delve into find themselves traveling to learn more. Not only is oatmeal one of America’s favorite breakfast foods, but we also celebrate it annually on October 29th. It’s a perfect day to enjoy one of America’s favorite breakfast foods. A warm bowl of oatmeal starts a day off right. Add spices, fruit, nuts, or nut butters to add flavor. It’s also a versatile ingredient. Add oatmeal to baked goods to create a delicious crumbl...e. We use it to make granola, cookies, and bars. Sometimes, recipes for soups call for oatmeal, adding thicker texture and nutty flavor. Steel-cut oats are coarsely cut oats. They’re the nuttiest and most flavorful oats available. Oatmeal also comes in different forms. Rolled oats are a whole grain oat that’s rolled into oat flakes. They may take longer to cook, but the nutty flavor adds to the enjoyment. Another kind is instant or quick oats. These oats cook more quickly because they’ve either been pre-cooked or cut thinner. They lose some of the nuttiness found in rolled oats, but they offer similar health benefits. Oatmeal offers many health benefits. A bowl of oatmeal daily can lower cholesterol. It may reduce the risk of heart disease. It may reduce your risk of cancer. (According to the American Cancer Society, eating a diet high in fiber may help reduce your risk for cancer.) The grain is low in fat. Oatmeal is low in calories. Add oatmeal to your diet as a good source of iron and fiber. Some favorite oatmeal toppings include brown sugar, sugar, cinnamon, peaches, blueberries, strawberries, bananas, nuts, and granola. Oatmeal has a long tradition in the state of Vermont, which originated within the Scottish settlement. Although there were many variations, most oatmeal recipes began with steel-cut oats. They soaked the oats overnight in cold water, salt, and maple syrup. Early the next morning, the cook would add ground nutmeg, ground cinnamon, and, occasionally, ground ginger. The pot was then placed over heat and cooked for approximately 90 minutes. The oatmeal was served steaming hot with cream, milk, or butter. Vermont leads the United States in per capita consumption of cooked oatmeal cereal. The Quaker Man is one of the oldest advertising mascots in America. On this blah day, enjoy some chocolate NATIONAL CHOCOLATE DAY National Chocolate Day, on October 28th, recognizes one of the world’s favorite tastes. While many specific chocolate related holidays exist throughout the year, National Chocolate Day celebrates all things chocolate. As America’s favorite flavor, chocolate is well-deserving of its own day of honor. (Some sources designate July 7 or December 28 as Chocolate Day or International Chocolate Day.) How is chocolate ma...de? Chocolate comes from the seed of the tropical Theobroma cacao tree. Cacao has been cultivated for at least three millennia and grows in Mexico, Central America, and Northern South America. The earliest known documentation of using cacao seeds is from around 1100 BC. Since cacao tree seeds have a very intense, bitter taste, they must be fermented to develop the flavor. Research has found that chocolate, when eaten in moderation, can lower blood pressure. Once fermented, the beans are dried, cleaned, and roasted. After roasting, the shell is removed to produce cacao nibs. The cacao nibs are then ground into cocoa mass, which is pure chocolate in rough form. The cocoa mass is usually liquefied then molded with or without other ingredients. At this point in the process, it is called chocolate liquor. The chocolate liquor may then be processed into two components: cocoa solids and cocoa butter. Unsweetened baking chocolate cocoa solids and cocoa butter in varying proportions. Sweet chocolate cocoa solids, cocoa butter or other fat and sugar. Milk chocolate sweet chocolate with milk powder or condensed milk. White chocolate cocoa butter, sugar, and milk but no cocoa solids. October is National Pasta Month, and October 17th recognizes National Pasta Day. Pasta lovers celebrate! While we find noodles all over the world, pasta is a type of noodle of traditional Italian cuisine. The first reference dates to 1154 in Sicily and was first attested to in English in 1874. Typically, it is made from an unleavened dough of durum wheat flour. The flour is mixed with water or eggs and formed into sheets or various shapes. It can then be served fresh or dried to be stored for later use. Types of Pasta Look for pasta in pasta in both savory and dessert dishes. Since it’s so versatile, pasta lends itself to sweet and every other dish on the table. Cooks feature pasta as a main dish, but they also serve up delicious hot and cold side dishes as well. And then, of course, those special desserts we can’t resist making our mouths water. Cooks originally made fresh pasta by hand. However, today, many varieties of fresh pasta are made commercially. Large-scale machines bring choices to our grocers daily. Smaller pasta machines on the market make having the freshest pasta at home even easier. Dried and fresh pasta come in several shapes and varieties. There are so many kinds of pasta! According to the Encyclopedia of Pasta by Oretta Zanini De Vita, 310 specific kinds of pasta identified by over 1300 names have been documented. In Italy, names of specific pasta shapes or types vary with locale. Example: Cavatelli is known by 28 different names depending on the region and town. The size and shape of pasta may determine the best sauce to pair with it, too. For example, serve linguine with lighter, thinner sauces to avoid breaking the noodles. A similarly shaped noodle, fettuccine, is less delicate. That’s why it carries heavier sauces like alfredo. Learn more about pasta from the National Pasta Association.
