Do you read labels when you’re grocery shopping. If you don’t I’m pretty sure you’d be surprised by what’s in a lot of the foods you buy. Even things you think may be healthy like hummus. Whenever possible I make my own. Living in a small town I don’t always have the option to purchase healthy alternatives. By making things myself I can control what goes in them. If you want to eat better this year start reading labels and make smart purchases as the grocery store.
Last night I made a delicious grain bike for dinner. I was too hungry to take time for a photo. I used some of the leftovers for lunch today. It had black rice, black beans and shredded Jack fruit with taco seasoning, cumin, and cilantro, fresh spinach, and salsa. I’ll definitely be making that one again.
