It’s #nationalcheeseloversday ! There are likely no greater lovers of cheese than the two of us. This 4 lb. #rawmilk cheddar was opened on October 13th, 2020 after aging for 4 months, and eaten more rapidly than was likely polite. . While I’ve grown and learned in my cheesemaking craft, we’ve eaten some of the best cheeses of our lives: briny feta crumbled over shrimp and tomato pasta, poutine laden with squeaky cheese curds, pizzas oozing with fresh mozzarella, eggs scram...bled with cheddar, gooey mac and cheese....the practicing has been a delicious experience! . As we work hard toward becoming certified to sell raw milk and farmstead cheese legally I will continue honing my skills. We feed our cows nutrient-dense grass hay, which results in the rich yellow color of the cheeses, and a far higher yield than the 10 lbs of milk to 1 lb. of cheese expected. There are times when savoring a slice of cheddar that I swear I can taste the essence of what those cows were eating. The grass imparts a fragrant sweetness that has prompted me to literally hug them when they’ll let me get close enough. This cheese just makes us love our cows more. . In honor of today, I’ll open a bandaged raw milk cheddar that has only been aging for 2 months. We will have wine and cheese before supper, which is ziti made with our beef, tomatoes from our garden, and topped with homemade mozzarella. Who said farming is hard? No ordinary steak. . This was our dinner last night. We savored every delicious bite because we kept very little meat from this dairy steer. The bulk of it went to the @rvfoodpantry in the form of ground beef. . We believe that everyone deserves access to sustainably and humanely raised food. High quality food. ... . This is no ordinary steak because it was the same quality as our Wagyu. But we chose to feed the people with it. . We often say the meat we raise tastes better because the animals we raise are happy.
