So as many of you know, last week we ran a panini with cauliflower burnt ends. It sold out within one hour of opening. The man responsible for smoking them was Brian Callahan, a good friend who lives down the street from me who in his spare time produces some of the best smoked anything I’ve ever been lucky enough to try. Then last night he gave me this. @kerrygoldusa butter that he smoked and vacuum sealed last month. I mean smoked butter, where do you even start. He told me... the curing process afterwards let’s the flavor penetrate and mellow whilst also taking away that initial blast of smoke. To say this butter is life changing would be a f...ing understatement. Sliced cold on a crusty baguette made my knees buckle. Some of the butters natural qualities where personified and the smoke was subtle yet ‘there’. Truly sublime Brian.
