Fermentation Mary Jo and I got our courage up to attempt Korean Kimchee and Sauerkraut to end our 2019 Season. Meaning we have read about it, talked about it, fermented some cabbage and radishes in years past and did not dare to eat them! So, we talked more, read more, laughed at ourselves more, and said we are doing this! Posting pictures of us processing and packing the jars and placing them in a cooler by the kitchen table because it requires a dark and cool place to f...erment! Turns out fermented foods contain good bacteria called probiotics that improve digestion, boost immunity, and help maintain a healthy weight. What interests me the most is the fresh crispness the vegetables maintain. The fun will be finding ways to include these new food items in our meals. For me, it is like eating a dill pickle with a sandwich instead of potato chips. Equally as satisfying in flavor and crunch but much healthier. Check back soon to see our next processing step.
