From Hae Jung Cho: Ramps in cream! Just wash and put in a baking dish, add cream to cover, salt and pepper, maybe a little nutmeg, bake until ramps have cooked and cream has thickened slightly. Eat with hearty bread. Die happy.

I swear last ramp meal of the season. Duck risotto coming up. If only I had a few morels... I know, I’m amorel.

It’s always sad when ramp season comes to an end. Cavatappi, broccoli rabe, Cedar Hawk farm sausage, toasted walnuts, Parmesan, red pepper flakes, olive oil, shallot and garlic. And a few end of season ramps.
