Kettleborough Cider House 15.05.2021

REOPENING MAY 1st! Our taproom will be open for the season beginning May 1 at noon. Come hang out with River the new cider pup! Spring/summer hours: Fri: 5-9... Sat: 12-9 Sun: 12-5 (These pictures took 10 minutes and lots of treats to get. Appropriately, when we ran out of treats we used an apple to finally get the perfect pic!)

The "Sausage Principle" says that if you love something, never learn how it's made. Well, sorry to burst that bubble, but here's what our newest cider looks like right now mid-fermentation. The rising carbon dioxide bubbles float apple solids, congealed pectins, and dead yeast cells to the surface. Of course we separate that stuff from the liquid before bottling, but for now it's just a part of the process. This is a very slow ferment because we didn't add any manufactured yeast so we're relying entirely on the wild yeast that naturally came in on the fruit or from the air. So you don't get that big, fast, super bubbly fermentation but rather a long, slow, steady process that yields a much more interesting cider. And it smells amazing!
