We are proud to have Jacques Capsouto of Capsouto Winery joining us for the event. He makes wine in a place called Peki'in...the home of the cave of R" Shimon Bar Yochai, author of the holy Zohar...the book of Kabbalah. When making wine, we must take a lesson from the story of R" Shimon, who stayed in the cave for a few years learning the deepest secrets of the Torah and eating nothing but carobs to survive.... When he came out of the cave, he was "too hot" for the world, as he was filled with holy fire...and had to go back in the cave to cool off. Wine needs time. If it comes out before it's ready, its instrinsic flavors won't be palatable to the world.
