Another week, another chance to knock some things off the list! In a fit of feeling overwhelmed, we made this list to remind ourselves how far we’ve come. We realized we’re actually doing pretty wellit looks like we’re about 3/4ths of the way through! Next on the list is: installing our fancy new countertops!! After much discussion and anguished hand wringing (jk, kind of), we have decided to go with some amazing cement tiles that we fell in love with. Progress pics com...ing next week! Though this final 1/4th of the project is gonna be a doozy, it will actually be the fun part where we can add some color and a few design elements and finally start putting everything back together again. Sometimes you’re on a quick walk with the pup and the moody sky just casually knocks your socks off. There’s something so special about this little slice of the world. We are working hard to get back open it seems like we are actually going in reverse progress. Since opening our business (almost 4 years ago now!), we haven’t been able to keep up with many of the needs of our 1890s buildings. While we are rebuilding the shop, we are also are getting these brick gals all shored up and in fine form. We may have taken on a little more than we meant to! Thank you all for your patience, and we can’t wait to throw open our doors again soon! When that soon is, we aren’t quite sure, but soon. #coxsackieny

Yesterday we were able to visit with the magical and most supreme of coffee gurus and master roaster, Flavio, of @sixdepot! It was amazing to share a meal with him, have a quick coffee tutorial, and explore the roastery. The video is of an enormous vat of Notes From the Undergroundthe roast we use for our espresso drinkscooling down after being roasted to perfection. We are not worthy!! We loved catching up with Flavio and his wife and partner, Lisa, and hearing more i...n depth about the connections that a cup of coffee can make across worlds. The beans that you brew each morning carry with them the sunlight and soil and expert care that grew them in their home country, are then sent across oceans to be carefully roasted by Flavio and his team in a former train depot, are bagged up and sent to us a mere three days after roasting, and brewed into that most holy of beveragescoffee. We then hiked to the top of a mountain in the fog and wandered through a huge orchard of wild blueberry bushes. Always good to get away and gain a new perspective. If you haven’t yet, definitely make the trip out to West Stockbridge, MA to visit the Roastery and Cafeit’s only about 45 min away, just over the NY border. Weezie has taken to stealing paint rollers and secreting them outside amongst the plants. I feel ya, pup, I feel ya! Mostly done with drywall seaming and painting (walls and ceiling!) one of the jobs that we are extra slow at. Things should hopefully start picking up now. Note to self: even though a pandemic seems like a good time to close down and do renovations, it might end up being a puzzle of delays and scheduling and running (almost) all the way out of money .
