My Sweet Thyme

Thank you so much to our Cherry Lane PTA for asking me to cater Back to School Teacher Appreciation Lunch 2016!

Summer fruit! Doesn't get much better than this! Happy Labor Day everyone!

Two days ago I made a variation of my crockpot pulled chicken sandwiches as an experiment for an upcoming order. I took a large 11x13 Pyrex, sprayed with Pam and arranged 10 bones skinless chicken thighs flat and brushed with BBQ sauce, covered and popped in a 300 degree oven for 4 hours. I let them cook and shredded for BBQ chicken sandwiches. In a second Pyrex I arranged the same number of thighs and sprayed the top with Pam and coated with Penzey Galina Rub for chicken and... ribs. When they came out I let them cook and shredded and saved for tonight. In a large frying pan I put a sick of butter, a pound of chopped button mushrooms, 1/2 a red onion, small can of chopped chilies, large can of pink beans and cooked until softened. I added the chicken and 1/2 cup of water, covered and cooked until warm. In a medium burrito wrapper I added the meat, shredded cheese, rolled and placed 6 in a Pam coated baker and baked on 350 for 30 minutes. Topped with sour cream these are a great high protein dinner! Lunches are made for Monday! Grilled chicken, Romaine, Campari tomato, fresh mozzarella, basil, kalamata olives and Green Goddess dressing!

Steelhead trout, yellow rice, sautéed spinach! It's what's for dinner!
