Happy Foodie Friday Today we have a Tofu Bowl! This is such an easy and flavorful recipe and I never get bored of it! Tofu is really the best out there. You can use it in tacos, in rice bowls, in sandwiches... it’s so versatile. Lots of people think tofu doesn’t taste good but you have to cook it right for it to taste amazing! #tofustan Ingredients ... - Firm tofu - Paprika - Salt - Pepper - Trader Joe’s Cuban Inspired Seasoning (has an amazing lime flavor to it that I love) you can use garlic powder and lime if you don’t have this! - Olive oil - I eyeballed everything! Add as much/less spices as you please :) you can add whatever you want to it - Cilantro Instructions - dry tofu with napkins - Cut tofu into small rectangles - Heat oil on medium - Add tofu with dry ingredients - Mix together and then turn the heat up to medium high - Pan fry it till it is crispy on the outside - Add cilantro and mix - Serve with rice and your favorite veggies, chipotle mayo, whatever you please!

Just a few more foodie Friday’s left till next semester Today I made some chole masala, it is truly one of the best dishes ever. Eat it with roti, naan, paratha, bhature or rice! There are so many options this is one of my harder and longer recipes but it’s the most satisfying one also! Ingredients ... - 2 large cans of chickpeas - Oil - 2 onion - 2 large tomato or 4-5 small tomatoes - Ginger and garlic paste or mash your own ginger and garlic! - 2 tsp turmeric - 2 tsp chili powder - 2 tsp cumin - 2 tsp garam masala - 2 tsp amchur powder (dry mango powder) - 3-4 cardamom - 3 cloves - 1 large bay leaf - 5-6 peppercorns - Salt - 1 cinnamon stick - Water - 3 tbsp vegan yogurt (optional) Instructions - Blend onion - Heat oil with spices on medium low heat for a minute, let it cook a little and don’t let it burn - Add onion and cook till it becomes dry paste - Blend tomatoes, add to pan and mix, let that cook till it becomes dry - Add chickpeas - Add enough water to fill pot - Add salt to your taste - Let cook for 1 hour on medium high heat, add water if needed, I add water multiple times through the process - Make sure chickpea can flavor is gone! Longer you cook it the more it soaks up the flavor - Add yogurt half way through cooking if you want - Serve with paratha, roti, naan or rice !! #thenewschool #studentlife #studentleadership #gnarls #gonarwhals #foodiefriday #may #vegan #foodie #indianfood #chole
