New Vegan Plate Alert! Ember Roasted Long Island Cheese Pumpkin with Black Sesame Tahini, Pistachio Dukkah, and Cilantro Sprouts. This dish show cases the cheese pumpkin, a varietal also known as the Cinderella pumpkin which is in the butternut squash family. The pumpkin is roasted low and slow on the wood fire grill and finished in the oven, glazed with reduced pumpkin juice, and crusted with pistachio Dukkah. Dukkah is an Egyptian hard spice blend, ours has pistachio, coriander, cumin, fennel seed, white sesame, and fried mint and cilantro. We can’t wait for you to try it this weekend!
