Potato: An Anti-Inflammatory Food A review, published in the American Journal of Potato Research, discusses the role of potatoes in helping to combat chronic inflammation. Potatoes contain a variety of components such as resistant starch and fiber that can impact gut bacteria, which in turn, can produce compounds with potential anti-inflammatory activity that can be effective against various chronic diseases (e.g., obesity and type 2 diabetes). These anti-inflammatory compounds may help to improve the function of the gut. Given that potatoes provide 5% to 15% of dietary calories for various populations around the world, this review notes that potatoes and potato products represent an attractive "delivery system" for anti-inflammatory compounds among the general population.

Potato as a Source of Nutrition for Physical Performance A recently published review in the American Journal of Potato Research discusses the latest science on nutrition needs for optimal physical performance. The article focuses on the potential positive impact of high-quality, nutrient-dense carbohydrates versus low-quality carbohydrates on performance, among other topics. There are two key takeaways to note: potatoes contain an array of macro- and micro-nutrients as well as energy, offering the full range of benefits athletes need; and potatoes are an excellent way to replenish the body's carbohydrate stores to normal levels, for immediate use.
