Noble Pies

This week’s specials have arrived! In 1978 I left New York to go to school at Colorado State University. On a visit to my friend’s house one weekend, I discovered one of her mom’s cookbooks called Colorado Cache. It was put together by a women’s auxiliary group out of Denver. The recipes are all delicious but one became my favorite for over 40 years (oh dear!). I wanted to have a way to share this recipe so it has become our Chicken Curry Pie. Chicken, onions, celery, garlic, peas and spices slowly simmered in a curry sauce then baked in our butter crust. We also have a vegetarian option made with sweet potatoes, cauliflower, zucchini, onions, & celery.

This weeks sweet special: Atlantic Beach Pie! Atlantic Beach Pie: Inspired by the request of two of our best friends. This lemon lime pie will remind you of summer at the beach! The sweet and tart filling is baked in our all butter crust and then garnished with fresh whipped cream and a touch of sea salt from @syracusesaltco sprinkled on top.

I need your help! Tom doesn't like the name of this pie. Can you help think of a new name? I would really appreciate it! I have racked my brain and have not come up with anything :-) Sweet and Spicy Meat Pie:... This one of my absolute favorite pies. It is not your usual meat pie! It is rich, sweet and spicy with a Middle Eastern edge, inspired by the great Chef Ottolengi. Ground beef and sausage, spices, caramelized onions and whole eggs are wrapped in our savory butter crust.
