The Côte de Beaune Our featured wine region for May is very near & dear to us: the Côte de Beaune. It could be said that no other region of the world has wine of the highest quality in both red and white colors. Elegant, rich, and entirely delicious whites are made in Meursault, Puligny-Montrachet and Chassagne-Montrachet, while reds develop intense red & black fruit on the hill of Corton and Beaune, and further south, the vineyards of Pommard & Volnay tell very different sto...ries. Look for cuisine that is at once luxurious & stimulating as well as hearty & satisfying. We are thrilled to present a wine dinner showing off some of the best producers, vintages & terroirs that Burgundy (as well as France, or even the world, for that matter) has to offer. Look for top producers like Guy Roulot, Michel Lafarge, David Croix, Benjamin Leroux, and Pierre-Yves Colin-Morey. Try different vineyards from the same producer in the same vintage!. We’re introducing this week’s menu chock-full of delicious and satisfying winter flavors. Enjoy a hearty stew of fresh cranberry beans, yellow foot chanterelles, root vegetables & garlic confit under a crust of crumbled sourdough & parsley. From cold Maine waters, we’ve got cod, littleneck clams & mussels stewed with salsify, celery root & sweet dulse seaweed. Our veal is imported from France, stuffed with black garlic before braising, and treated in a slightly Mediterranean style with fennel & romanesco. Warm up with a Saint Urban cocotte! Showing off the best of what’s out there, from pristine Maine seafood to otherworldly white truffles from Alba, Italy, we’re offering four dishes this week, meaning there’s something for everyone. In light of our dining room being temporarily closed, we are taking things in a new direction and introducing Saint Urban ‘en Cocotte’ our new Take Away concept. Each week, we’ll offer a new menu of dishes cooked ‘en Cocotte’ in a cast iron Dutch Oven for you to pick up and enjoy at home. Simply order ahead, reheat in your oven, and serve comforting cuisine from this beautiful cooking vessel, and return it when you’re done. (Best part, no wasteful to go containers!) And as always, we will have new and exciting wines paired to each dish. You can also stop by our Retail Wine shop Tuesdays - Saturdays from Noon - 8pm to stock up on small production, terroir driven wines. A new month, a new wine region We’re thrilled to invite you to our fifth month of featured wine regions. This month we’re in the Côte de Nuits, the north of Burgundy, where arguably the best wines in the world are made. This is the golden slope of land planted by Cistercian monks over 1000 years ago (and what else could they do but perfect the art of growing pinot & make wines with great care?). But that’s not it, Burgundy is our spiritual home at Saint Urban, and after many ...years of working in and studying the region, we’ve found the wines that deliver the thrilling Burgundy experience without breaking the bank. Dinner 1: from North to South As the region is broken into small villages (it’s the village name in the biggest type on the label) what better way to experience the unique, sometimes subtle, sometimes extreme differences between these wines, then by a trip from one end to the other? All of these wines are from the exceptional 2015 vintage, making the assessment more obvious, as well as maximizing all your pleasure. Dinner 2: The 3 Signatures When Discussing, tasting, and living these wines, the three most important signatures come out: the producer (who made the wine), the terroir (where the vines are, and it’s particular microclimate) and the vintage (the specific year the grapes were harvested, and nowhere on earth varies as much as Burgundy). We’ve built a dinner around these 3 signatures, making it easy experience the character of these wines. We’ve got the same producer making different wines. We’ve got the same vineyard made by different producers. And We’ve got the same wine from different years! Dinner 3: Big Bottles, Pinot Gouges & Monopoles, Oh My! To celebrate the end of our month-long stay, we pulling some big corks (from some big bottles)! Learn all about those esoteric buzzwords like monopole, pinot Gouges and jeroboam. For this week pick up a sweet corn soup w/ lobster (to be enjoyed hot or cold), crispy duck confit w/ fresh beans & zucchini, & a sweet corn & blueberry dessert to get playful with in the plating. Socca Crèpes: All throuought Provence, you can find Socca, products made from chickpea flour, water & Niçoise olive oil, in every texture from a thin, foldable crèpe, to a thick and crunchy French fry. Here we have the former, filled with local Swiss chard & ricotta di Buffala, and sweetened with a concentrated, yet light tomato coulis. (And plenty of that good Niçoise olive oil!) Berkshire Pork Cassoulet: While not exactly on the coast, Puy lentils (from slightly further n...orth in the Auvergne) are still favorite in the south. Here we have Puy lentils, cooked with a flavorful mirepoix, spiked with Taggiaca olives, and arranged with roasted zucchini & summer tomatoes. The Berkshire pork comes in the form of Tender roasted loin, rich braised belly, & snappy garlic sausage. Single Origin Chocolate Sorbet: Our favorite chocolate, a single-origin example produced by our friend Tyler, here in the form of a rich (and surprisingly dairy-free) sorbet, as well as a crispy, almond-studded biscotti. They go with a classic panna cotta in the style of Turkish coffee: with a little cardamom & lightly browned sugar. See more

Just outside Montpelier, the locals taught us how to make regional favorites like #clapassade, #bourride, & #anchoiade. Also being here in the middle, its just a quick drive west for the best #cassoulet (made in the summer with fresh beans) or east, for a little raw tuna w/ cavallion melon. Today was already a bit of a #milestone for Saint Urban, as we’re finally launching our wine dinners, (and a socially-distanced one, at that) which we’ve been working on for months. Here’s something that looks very impressive, but takes seconds to prepare & serve. From this week’s takeaway menu, we’ve got a vanilla semifredo with fruits in a light fruit & flower bouillon. Surrounding the semifredo (that’s an itallain dessert somewhere between a frozen meringue & vanilla ice cream; very light & delicate w/ little pops of caramelized sugar) are Harry’s Berries strawberries, Frog Hollow plums, Reeves Farms blueberries, local red currants, black mission figs & bing cherries, all swimming in a light bouillon of fruits with hibiscus & chamomile.

There’s a lot going on here at Saint Urban. We’ve got 3 different menus for the week: Takeaway, Dinner (Friday & Saturday), & our Discover Tuscany wine dinner (Thursday). The Thursday wine dinner is sold out, but is presented here for those curious about our style of wine dinner. We’re chugging along and having a blast bringing a little bit of #Tuscany to Syracuse. The Brunello is flowing, the soffritto is gently caramelizing & the Vin Santo is being whisked with egg yolks to... make zabaglione??? As we approach peak summer we’re #blessed to have on hand: sustainably-fished Maine #bluefin tuna, Nova Scotia halibut, fresh porcini, humanely-raised Berkshire pork, dry-aged grass-fed beef, tomatoes from the master, Tim at Eckerton Hill Farms, and so much more. Takeaway is a safe bet for those still not wanting to dine indoors, and this week’s menu is the very essence of summer: chilled peas, smoked salmon & pickled white asparagus, heady saffron rice studded w/ Maine lobster & confit cherry tomatoes, & a very #Charlietrotter chilled fruit soup. Each month we feature a different wine region, as they align with the seasonal ingredients: Champagne for Valentine’s day, Bordeaux at Christmas, Barolo in truffle season and more. We offer two distinct dinners, one offering excellent wines, showcasing the typical wine styles of the region, priced under $100 (the ‘discovery’), and the other, featuring hard to find, ‘holy grail’ wines: wines you may never forget, priced a little bit more (the ’savor’). This month we’ve got the sun-kissed flavors of central Italy (as well as our usual gastro-bistro fare). This will be our first full month of a specific wine region, as we only got 2 days of Spain in last month, so there will be some menu development over the weeks, and fingers crossed, a wine dinner! We’re getting into some #Tuscan classics on this week’s takeaway menu! Have your choice of 2 year prosciutto di Parma or house-cured yellowtail with super-ripe Cavaillon melons & black figs. Who needs meat when there’s rich, fennel & rosemary flavored fish stew, loaded with Maine lobster, octopus, Bangs Island mussels & cod? We’ve made one of our favorite cakes, a Venetian brown butter cake, (which we do with pears in the winter) full of juicy black cherries. We’re serving that with our locally made, single-origin chocolate from Madagascar. Also available this week (just in time for July 4th grilling) we’ve got some fun, natural & sustainable meats: 2 different beef steaks, plus pork chops and our own sausage. Happy fourth!

Here we have this week’s take out menu: all three dishes are interpretations of our favorite classics. Our first course is a variation of the Piedmontese classic, Vitiello tonnato, which is poached veal, thinly sliced, marinated in an aioli of capers & tuna. Sound interesting? Very much so. We’re using all-natural, Berkshire pork loin in place of veal, and garnishing with crispy heirloom celery, breakfast radish & green asparagus. Our second dish is essentially a side dish, ...but it’s so good it deserves to be a main course. The dish is called ‘petits pois à la Française’ and it consists of sweet spring peas cooked with bacon lardons, sweet onions & wilted lettuce. We’re adding a few crispy fingerling potatoes and #greencircle chicken, braised in white wine, for a bright combination of spring flavors. Clafoutis is a very old-fashioned pancake-sort-of-dessert, often with the cherry seeds left in. We’ve taken the seeds out, and added @nostalgiachocolates single-origin chocolate (our favorite fruit & chocolate pairing is chocolate-cherry) for a more intense dessert. For those about to grill, we salute you! We’ve got super nice, all natural, raised-with-care, well marbled, tasty, pork chops, ready for you to cook outside (or inside, if you like). We’ve brined them with mustard seed, pepper, garlic & rhubarb, so they’re already perfectly seasoned, and will be even juicer, and easier to cook. They come with a rhubarb mustarda to make the flavor pop, and a cake tester, to help you achieve the perfect doneness. If pig isn’t your thing, we’ve got Maine halibut, details to follow!
