OYSTER BAY is back open with normal hours today, as all employees returning to work tested negative for Covid-19 over the last two days. Thank you for keeping us so dang busy in the roastery this season. Here we’re resting our Sure Shot Espresso Blend (red), Cold Brew (Blue), and Red 5 Diciembre, Mexico for drip service. And on the 5th of December, no less! It may seem counterintuitive, but we recommend resting your drip coffee at least a few days, and espresso at least a week, if not two weeks for optimal extraction. Stored properly, well roasted coffee should last about a month before succumbing to staleness. Questions about how to store or rest your coffee? Comment Below!

Welcome back to the menu, @kininicoffee ! It’s our second year featuring this coffee from the highlands of northern Rwanda, and this lot is just plain excellent. Thanks to info provided by @croptocup, we’ve been blown away by some of the details of this year’s harvest. For instance, after three years working with WeatherSafe to monitor their crop from SPACE, they have increased production by an astonishing 2 Kilos of cherry per tree!... There’s no doubt of the sophistication and dedication poured into this coffee, with a sweet and fragrant profile like wildflower honey, squeaky clean to the last drop. If you’re a fan of Rwandan coffees, we promise this is not to be missed. Some fun stats for this years harvest: The Cooperative is 85% Women 10% of their profits fund a local school for orphans and a healthcare post.
