Recently, I did an Instagram story for healthy blueberry-cranberry lemon muffins. They were delicious, not overly sweet, and filling. Below is the recipe I came up with 1 cup whole wheat flour 1 cup white flour 1 teaspoon baking powder... 1/4 teaspoon baking soda 1/2 teaspoon salt 1/2 cup of sugar (if you want the muffins to be a little sweeter, make this 3/4-1 cup of sugar) 4 tablespoons margarine/butter (or you can use 1/4 cup of oil) 1 large egg 1 lemon- zest and juice 1/2 cup plain greek yogurt 1/2 cup of milk 1/2 cup of blueberries (frozen or fresh) 1/2 cup of cranberries (I used frozen and cut in half-important) 1 teaspoon vanilla extract Bake 20 minutes at 375-400 degrees. 1. Combine the flour, baking soda, baking powder, and salt- mix. 2. Separately sugar and margarine/butter, beat. Add in lemon zest and lemon juice and then egg. 3. Slowly, combine the dry ingredients from step 1 with step 2. 4. Add in the milk, greek yogurt, blueberries, cranberries, and vanilla extract, mix. 5. Pour into muffin tin (spray with non-stick spray). Bake for around 20 minutes on 375-400 degree oven
