These ravioli were made by Michelle this morning entirely by hand - she used the well method to make the dough, a mattarello (rolling pin) to roll out the sfoglia (sheet of dough), then filled the dough with a ricotta mixture and cut the ravioli with a pastry wheel (although a fork & knife works just as well!) It’s a process that requires time, patience and Sure, using a pasta machine is easier but since not everyone has one at home, we’ll teach you how to make ravioli ...with a few basic tools.
