Breakfast Casserole Crust: 2 cups hashbrowns 2 tablespoons butter... 1/2 teaspoon garlic powder 1/2 teaspoon onion powder Pinch of cayenne 1/2 teaspoon black pepper 1 teaspoon salt Filling: 8 eggs 3/4 cup milk 1/2 cup sour cream 1/4 cup of your favorite salsa 1 cup if cooked diced meat (I used turkey sausage) 1 teaspoon salt 1/2 teaspoon garlic powder Finely diced onion & bell pepper Topping: Shredded cheese Smoked paprika Preheat your oven 425 degrees. Spread the hashbrowns in the bottom of a casserole dish, pour the melted butter evenly over, then evenly sprinkle your salt, pepper, onion & garlic powder, and cayenne over the top. Bake for 25 minutes to develop a crispy crust. Whisk all your filling ingredients together until very well combined and airy. Pour into the crispy hashbrown crust and bake another 30 minutes at 350 degrees. Sprinkle your desired amount of shredded cheese over the top along with a dusting of smoked paprika. Bake another 2 - 3 minutes until cheese is melted and bubbly. Let sit 5 -10 minutes, slice, top with sour cream, salsa and some sliced green onions and enjoy!
