Happy National Gluten Free Day! I've been following a strict #glutenfree diet since 2012 when I was diagnosed with #celiacdisease. Looking for a sweet treat that you don't need to feel guilty about? Look no further! Decadent Dark Chocolate Peppermint Truffles These scrumptious treats are indulgent and rich, but also much healthier than most of the sweet treats you'll be around in the coming days! With dates as the primary sweeteners, you're consuming lots of fiber which helps to stabilize the blood sugar versus anything made with plain sugar. Dates are also good sources of magnesium, potassium, copper, m...anganese, iron and vitamin B6. Yum! Ingredients (makes 30-48 truffles depending on how big you make them) 3 cups Pitted Dates (packed) 8 cups Water (just boiled) 1 cup Cocoa or Cacoa Powder 1 1/2 tsp Peppermint Extract cup Coconut Oil plus additional tbsp for chocolate coating 12 oz Organic Dark Chocolate Chips 2 candy canes (crushed) Instructions: 1. Add the dates to a large bowl and cover with just-boiled hot water. Let them sit for 8 to 10 minutes. 2. Drain the dates and add to a blender or food processor along with cocoa powder, peppermint extract and coconut oil. Process until the mixture comes together. 3. Remove the chocolate mixture and scoop into rough teaspoon-sized balls. Don't roll them with your hands just yet as they will be too oily. Place them on a parchment-lined baking sheet and put them in the freezer to set for about 8 to 10 minutes. 4. In a small bowl, add the chocolate chips and tbsp coconut oil and microwave on high for 30 to 45-second intervals until melted. Stir with a spoon to fully combine. 5. Remove the truffles from the freezer and use your hands to smooth them into balls. Take each ball and roll into melted chocolate with a spoon and then place them back on the baking sheet. Top with crushed candy canes and let them sit for 5 to 10 minutes to set or place in the fridge to set faster. Enjoy! #healthierchoices #sodelicious #yummy #glutenfree #vegan #happyholidays
