Babybacks tonight. Pork shoulder taking its sweet time today so that will come later.
Does your grilled chicken look like this?!? Super crispy bite thru skin with juicy bone in thighs. A favorite in our household. Marinated 5 hours with Chavettas BBQ marinade. The real true BBQ "pit" chicken. No sweet red sauce here folks. Accompanied with some local super tender asparagus that's finished with a balsamic glaze reduction and Romano cheese.
Pizza pizza! Crushed the pies tonight. Margherita con Burrata and Salame con Miele caldo. Of course as an ode to the one and only classic Brooklyn joint Di Faras, the basil was cut with scissors over the pie.

Another huge thanks to those that have decided to get the pulled pork pick up today! If you keep comin I'll keep cookin! Enjoy your lunch and hope to see you next week! We will be switching gears and kicking it up a notch and serving up dinner. St Louis style spare ribs, smoked mac n cheese (with 3 yr aged cheddar and gouda cheese that I previously cold smoked) AND pork belly burnt ends. It's gonna be a doozy folks. 10 orders total. You can make your own chef salad for this ...lol. Each order will be $25 and will include a nice big half slab of ribs, side Mac n cheese and a side of pork belly burnt ends. It will feed 2 people, you will not want to miss this, trust me. Will be either Sunday or Monday with a 4pm pick up.
