This is an excellent overview of the possibilities in sustainable agriculture. Once again, Rodale institute is doing amazing work at implementing new research and projects that we will all benefit from in one way or another. This work is so critical to our survival on this planet. We all need to know about it whether we grow food ourselves or not. Not to mention it feels so good to hear relatively good news in this really difficult time. I hope you have time to give a listen!

Here are a few of our favorite snacks and meal I’ve been making today. We follow a paleo diet with a touch of keto. Basically that means no grains, no sugar, low natural sweeteners, no dairy, higher fat, and medium protein. It’s an anti-inflammatory diet that has helped us tremendously. We can feel the difference! These are banana spice muffins that are perfect for any time and can be modified as desired. I make the batter in a blender and then pour it into the muffin tin.... 2 bananas, 4 eggs, 3 tbs ghee or coconut oil, 1/2c coconut flour, 2 tbsp raw honey, 1/2-1tsp spices of choice (I use fresh ginger or powder, cinnamon, cardamom), 1/2 tsp baking soda, 1/2 tsp baking powder, 1/4 tsp salt. 350 for 20-25 minutes. They are small so I make it a rounded 1/2 tsp of baking soda and powder and sometimes add more egg whites (depending on how many eggs I have on hand). I don’t cook with honey so I add maple syrup or erythritol powder (swerve brand) instead. The lemon balls are delicious! I use any nuts I have on hand (usually almonds) and coconut oil instead of coconut butter. Again, because I always have it on hand. Of course there is nothing like a roasted chicken cooked with veggies around the sides. I just crumble garden veggies from my freezer all around, drizzle with avocado oil (excellent for higher temps), salt, pepper and herbs. BAM! Dinner is ready. I used green beans, shiitakes and leeks this time.
