We are getting close to the end of broccoli picking. The stand has several heads today. It's time for broccoli soup, freezing florets, and cheesy casseroles! We are open all day today. We are picking broccoli in the snow! Broccoli likes the cold. In fact, it is a great vegetable to freeze for later use. Here's how: Cut broccoli into florets. Place in boiling water and cook on high for three minutes or steam for five. Immediately submerge the florets in ice water to stop the cooking process. Drain as much water off as possible. (I let the florets sit on a rack to dry). Transfer to a tray and place in the freezer. Place in a freezer bag or airtight container and remove as much air as possible. Foodsavers work great too. Place in the freezer and use within three months. Simple and easy. It is a fun job to do with children. Our tent is not up, but the stand is open. Broccoli is $6 per large head or two for $11.
